Because it works. Being needy, clingy or desperate leads to rejection. Being a bit distant and playing it cool leads to being chased.
We don't do it out of spite. We wouldn't even care either way. We simply do what gives us higher dating success. It's our makeup and cleavage.

Im in a career with a lot of guys. And some of them tell me, some tell my girl friends that if they do this or do that they seem desperate. or that if they say this or do that would make the girl attracted to them or whatever.

Yes. If I feel like things are becoming one sided or unbalanced in terms of how much effort I'm putting forth compared with a very small amount on the girl's behalf then I may scale back due to a concern of coming on too 'eager'.
Of course, who wants to be labelled as being desperate/clingy?
