
Every few years there is a new thing that we must supposedly cut completely from our diets. One year everything fat is bad, one year all red meat is bad, the next everything with sugar is bad, the next everything with carbs is bad, and the next everything with gluten is the worst thing on the planet for you. A lot of people get hooked on these programs that promise the world to people if only they'd cut out this one food.
If a diet plan is asking you to completely eliminate some food category, you need to really question why that is. I agree right now, that there are ABSOLUTELY some people with real gluten and lactose intolerances or medical issues that make digesting some foods terrible for their health (I know, I'm one of them, tried and tested, doctor approved), but it's not every person who's ever had a stomach ache after eating a piece of bread or drinking a glass of milk.

No Fat/Sugar Diets
Plain and simple, your body needs about 20-30% fat and some sugars. When you see diets that advocate for the total elimination of these two or just eating low fat or sugar free foods, they and you are missing the point entirely. Your body needs good fat and less refined sugars. You need 'good fats,' like polyunsaturated fats in nuts, seeds, vegetable oils such as corn and safflower oil, and fatty fish like salmon. You need natural sugars found in whole fruits. When you go on a rampage and throw out everything with a percentage of fat/sugar in it, most likely you're going to substitute those things with low fat/no sugar alternatives. Problem with this is many of those products use a lot of chemically engineered tricks to give their fat/sugar free food more taste. They will add much more sugar and salt and other chemicals into the food to give it a better taste. Guess what you don't need...more sugar, more salt, and more chemicals in your diet. All you're doing is substituting one 'bad' thing for another.
Moderation not total elimination is key. Eating healthy sugars and fats are key. One burger a week is not going to kill you, but eating 2 burgers a day might slowly do so. Eating a fresh piece of fruit or three a day, with the addition of the added fiber from the skins and the natural vitamins they provide, is good for you. Incorporating good fats like hand fulls of nuts as snacks is helpful to your body. Read your labels. The fewer ingredients a product has, the better it tends to be for you.

Gluten/Lactose Free Diets
Before you jump on the latest trendy diets that say drinking milk and eating bread are bad for you, actually sit down and figure out if this is specifically true for you or not. The only real way to determine this without medical intervention, is to keep a food journal. Record everything you're eating from the sauce on the side, to chewing a stick of gum, to the medications you're on, on down to the slice of bread for a couple of weeks and make note of how you feel an hour or two or immediately after eating those foods. Then eliminate one, not both at the same time, but one thing from your diet for at least two to three months. We're talking complete and total elimination from your diet meaning you need to read labels and make sure there is no dairy for example in your crackers.
Then reintroduce the potentially offensive food back into your diet after your allotted time period. Did your symptoms come back immediately? Did you start feeling so much worse in your day after eating? Are you exhibiting symptoms that seemed to have gone away during your food hiatus? If so, they may indeed be the cause of your health issues like gas, bloating, fatigue, skin issues, etc. The next step may mean you need to sit down with a registered dietician and your doctor and figure out ways to get the nutrition you need whilst avoiding the offending foods. You don't want to just totally eliminate something in the long term which can have a detrimental impact on you like dairy which can help you prevent brittle bones in your future.
