Do I need to take a day break inbetween to allow recovery if im not doing mass amounts?
the ankle weights are only 500 grams per ankle
I have 2kg per ankle that I have yet to use but building my strength first

If you have no training and are new into fitness. Yes you will need to give your body a break to recover. After you've been training for some time and 200 squats no longer causes your muscles to fatigue, then you can consider doing them without a break. If you are just starting, 200 of anything in 1 day will be a massive amount. I don't understand though, why would you be using ankle weights while squatting?
I've been doing it for 3 times a week for 3 weeks now. This will be my 4th week so id like to start to do it 5 times a week. Monday to Friday then rest weekends. Will I still get results?
To work the muscles in my glutes and legs. Isn't that what it does or should I just stick to bands?
If you do them in one series and get sore, you should have rest days for recovery. Switch between lower body, core and upper body workouts. That will give better results.
