It's been like 3 weeks now and I can walk okay now, but it kind of gets a tired feeling after a while and it's still a bit sore where the ankle bone is. Overall it's still a little sore and stiff a d I've lost a good amount of range of motion

in my opinion, at 3 weeks out, I'd see a physio. Best case they give you exercises and rehab to speed your recovery and avoid future injury. Worst case they identify a deeper issue and provide you treatment and rehab exercises for recovery, maintenance, and prevention.
Sometimes it can take months depends on how badly it is sprained
So just let time do its thing then?
Yeah not much you can do except keep trying to move it even if if hurts or will take longer to heal
I just have to be careful I don't roll it again because it doesn't like to go that same direction at all.

I guess it was a pretty bad sprain since I've never taken more than a day or two for an ankle sprain to heal
I kicked a wall once and hit the stud , almost broke my foot, took months to feel normal again, pulled a tendon in my arm and took 3 months before I could raise my arm up all the way again
