Hi Katie =) Welcome back to the site after you long absence lol.
If you want to keep from gaining weight while being forced to temporarily adopt a sedentary lifestyle then you need to reduce your caloric intake as well as temporarily cut all carbohydrate sources that aren't fresh fruits or vegetables from your diet, or at least keep them to a minimum. I wouldn't recommend sticking with this for long term as the nutrients found in whole grains are a big part of a healthy nutrition lifestyle, but given your immediate situation, you can get by doing it just fine for a while.
How did the accident happen? You okay? Is the Jimmy okay?

Just control your calorie intake. If you are indeed inactive, you should calculate your BMR and determine how much calories you would burn if you were to lay in bed all day.
Here is a calculator that will give you an idea, but it's certainly not the most accurate.

Try to consume calories somewhere below your BMR, because most of the time you end up going over it by sneaking in a last minute meal. Keep this up until you are ready to participate in physical activities.
keep eating healthy and ask your doctor what sort of exercise you could do if any. see if you can do something less stressful on your body like stationary biking or lifting light weights. even stretches and stuff will be good to keep you in shape so when you are better you can start working out again

Eat less.
You're not as active, you need to scale back.
Keep the protein/vegetables where they are, cut back on carbs.
