How do I make proper Yorkshire pudding?

To all the English folk out there (and anyone else who has a clue), please give me some pointers on how to make proper Yorkshire pudding. I try so hard and it’s always a fail! I have English ancestry so I figure it should be in my genes, but unfortunately I can never get it to work! Tips and/or recipes please so I can attempt it for Christmas dinner once again.

Ingredients
Makes 8 large Yorkshire puddings

3 large eggs
125g plain flour
½ tsp sea salt
150ml whole milk
Vegetable oil


Cooking instructions

Beat the eggs together in a mixing bowl using a balloon whisk.
Sift the flour with the salt, then gradually beat this into the eggs to make a smooth batter.
Whisk in the milk until combined. Cover and leave to stand at room temperature for about 1 hour.
Preheat the oven to 220°C/200°C fan/Gas 7.
Put 2 teaspoons of vegetable oil into each compartment of two 4-hole Yorkshire pudding tins (see tip, below). If you only have one tin, you’ll have to do this and cook the Yorkshires in two batches.
Place the tin in the oven for 12-15 minutes to heat up the oil and tins until very hot (this is important for the rise).
Stir the batter and pour into a jug. At the oven (this is safer than carrying a tin of hot oil across the kitchen), carefully pour some batter into the middle of the oil in each hole, remembering that it is very hot. Watch out as the oil will sizzle a bit as the batter hits it.

make sure the oil is very hot before putting the batter in
you can put herbs in
ie
time rosemary
etc

One of the key things is making sure you have decent tray for them, ideally a Yorkshire pudding tray.

the oil needs to be hot, smoking basically, this means not using low temp oils.

I prefer letting the batter rest for the morning, or at least half an hour.

If you use a muffin type tin, you get the ones that are all raised.

If you use a slightly wider one, where the bottom is more flat, they rise at the sides a lot but not so much in the middle.

Also butter and sugar on a hot Yorkshire is lovely
