Buying someone a gift is difficult and risky. Try to pay attention to things she says, and take mental or physical notes. Over time you'll hear her talk about things she wants. You can also pay attention to the things she looks at at the store. Not things she quickly looks at, but the things she seems to really like.

Be careful buying things where personal preference is important. Just because she likes a certain type of thing doesn't mean someone else can pick it out for her.

Something she can eat is always good and not likely to be wrong.

Keep the receipt. Then make it clear to her that you are perfectly OK if she wants to take it back and get something else. This might sound cheesy and she may not do it, but at least let her know that you really are OK with it.

A gift certificate is kind of cheesy also. But maybe combine a certificate with a promise that you want to go with her to pick out her gift. Throw in dinner. Make it clear that it's her day.
