Besides Carbon dating, probably something like contamination with heavy metals, eg Lead which was used in water pipes for a short period of time, or trace elements of other substances, which were only used during a short period of time, or something like teethgold...

Carbon dating is limited, as you said. Anything older than 500 years old is pure guesswork. It's like pinning the tail on the donkey.
Hence why, dates keep changing.
