Rules: Fight to the death. I am unarmed and have to beat the wolf.
So, there's some debate going around online that a man would not win against 1 wolf. I think I can beat one wolf with ease. I'm 200lbs and I do powerlifting and MMA. I have a year and a half of BJJ experience, 1 year of wrestling, 1 year of Muay Thai and kickboxing experience, and 4 months of judo.
A wolf only weighs 50-145lbs. That wolf is nowhere near as mobile as I and I'm much heavier. It only has one attack, which is to bite with its mouth. This is very easy to counter. If it lunges at me, I will dodge and punch or hit the wolf with a knee.
I can easily wrestle the wolf and put it on its side and choke it with a darce choke. I can take the wolf's back and it will slow down and get tired out or I can seriously injured it with me being 55-150lbs heavier than that wolf. The wolf will have no idea how to get me off it's back. I can also go do a dagestani handcuff on the wolf and it's cooked with elbows.
I can also hit the wolf with elbows or punches and get it knocked out. I can bust the wolf's teeth from punches and elbows and it loses its main weapon.
I can also easily do like a suplex or some type of throw and make the wolf land on its head and paralyze it.

Could a trained 200 lb man really beat a single wolf in a fight?
Your wrestling and BJJ moves won't help you much with a canine like a wolf. They have different physiology than a human. And that means different strengths and weaknesses. It also depends on the species of wolf. A large gray wolf can reach 175 lbs. They have a documented bite force of up to 500 psi. They can crack open a moose femur bone to get at the marrow. They are also faster than you. And they have better endurance. But their mouth is their only real weapon.
You on the other hand have something the wolf never encounters with its usual prey of grazers like deer, moose, or elk. You have 2 hands with opposable thumbs. And you can throw knees and kicks.
Wolves almost never hunt alone in the wild. They depend on hunting with a pack to harass and distract prey from all sides. And wolves are cautious. No wild animal wants a fight where it stands a high chance of getting injured. They want a meal, not wounds that will hurt their chance of survival.
Canines have one brutal weakness. Their rear legs and hips. They generate all their locomotion and power with their rear legs. But those legs are only designed to move forward / backward in a running motion. Splay the rear legs out to the side with force and the wolf is essentially immobile. And a hind leg makes a great lever to yank on. Front legs can be broken with a kick.
Your strategy would be to maneuver the wolf into terrain where it can't use its speed or circle you looking for an opening. And go for the legs while avoiding the wolf's main weapon, the mouth. But if you do that the wolf may wise up and say fuck this, it ain't worth it, and simply trot off to find prey that isn't a pain in the ass.
Can a human kill a wolf mano a mano? Maybe. But it probably doesn't happen the way you envision in the wild. More likely the wolf avoids the human as "bad Juju" based on thousands of years of instinct from going up against another apex predator that also travels in packs and makes tools.
Your MMA experience will translate poorly. The most valuable thing is not panicking. Even a choke is difficult to connect on a wolf.
That wolf is way more mobile and quick than you are. Even a dog playing is significantly faster than a human. You will get bit.
You will not counter. A wolf is not something where you can slip and elbow. The counter happens after you are bitten.
Wrestling a wolf is possible but much more difficult than you imagine. Doable, yes. But you'll be bit and scratched every second and if you're unlucky you won't have functioning arms to do anything with.
A wolf has about five times the pain tolerance of a human. While you could startle and shock it, if the premise is you're both fighting to the death that is not happening. Their bite force will also easily make them stay glued to you no matter what you do.
Could a fit trained man win? Absolutely! I'd even say the trained man is more likely to win than lose. But this all assumes the wolf is chewing instead of crushing. Wolves do both. If it is crush and then next limb? You're toast.
