Who's more intelligent, the guy with a 200+IQ who was the engineer who built the roller coaster or the 100IQ person who will never ride on one?

Engineers design things. They don’t build things. They don’t build things for the same reason that someone might not ride roller coasters, risk aversion. They get to avoid accountability for failures by saying “I just designed the thing. The builders are the ones who messed up!”.
Also, i’ve met and worked with hundreds of engineers. None of them were anywhere near 200 IQ. They were all much closer to 100 IQ than you would likely care to admit. You don’t have to be particularly smart to be an engineer. Especially now, computers do all the work.
So the person who designs roller coasters is neither smarter nor dumber than the person who perceives the risks and avoids riding roller coasters because of them. They are probably very close to the same in every way. They might even be the exact same person. How many engineers are so confident in their designs that they would test them on themselves first? The inventor of personal body armor, Dick Davis, did just that. He shot himself in the chest while wearing his own design. It’s widely considered foolhardy for a reason. Because most people, including engineers, aren’t as smart as they think they are. Davis’s example might lead many of us to assume he’s dumb, but his armor worked and it became the standard for law enforcement. He became quite wealthy as a result. Fun fact: he later lost a great deal of his fortune in lawsuits centered around defective vests. So, riddle me this, was he smart or wasn’t he?

If you're smart you stay off them. Odds are you'll never get hurt, someone else will. Nobody actually maintains those things.
