Parents don't like my boyfriend because he is Mexican, I'm white, any advice?

basicallly, my parents have had bad experiences with people who are Mexican. They've explained to me that Mexican culture is what they don't approve of and that I won't be happy. I've met my BF's family, and they are not the "typical" family my parents have described to me. His parents are wonderful people that have not done anything to make me feel uncomfortable and are very caring, only issue is that they don't speak full English. But if there is a language issue, my boyfriend translates. I know my parents love me and are just doing this out of love. I respect their opinion but it also hurts a little. My father knows I care about him and expresses his dislike for him. My mom isn't aware that I'm still with him because of reasons I don't wish to explain. My father has told me that he can't stop me but if I married someone that neither of them approved of, they wouldn't always be in my life. He goes to explain that they would still be around but they wouldn't be happy. I would like advice on how to talk to them in the future about this. Or is possible, however I'm sure it's impossible, anything I could say to them to ease their minds.
