Why do people stay with someone who hurt them?

Because they think they don't deserve any better or can get any one better. They are desperate for affection and will settle for whatever they can get. You see this when girls have boyfriends who threaten their lives if they leave or who even go as far as to kill the girl's kid/kids. Sometimes to keep a guy they will kill their own kid/kids.

Often times is the lesser of two evils, to begin with. Maybe a mirror of what is seen in childhood. Then turns into familiar and a warped sense of safe.
