So I decided to video call my boyfriend and I was explaining about my thoughts and emotions. Then I asked him “what are you thinking about?” And he replied “nothing.” And I asked him “what’s on your mind?” And he said “oh my god, I’m not thinking of anything. I’m looking at you!”

Men don't really think about nothing. They just think thoughts they aren't comfortable sharing or explaining (work related) or thoughts they know they'll get penalized for sharing (look at that girls butt over there).

While it is possible to just feel bored or 'not think' you're still observing things around the world and you can choose to avoid sharing as to avoid a conversation (he thinks is pointless). The issue with this, is that overtime it kills a person's desire to want to connect with you.

In your particular example, he messed up because when someone tells you about their thoughts and emotions, it's polite to show a baseline amount of active listening. Even if you're particularly paying attention, you can still take a moment to understand their 'vibe' of whatever topic they were going off about. He could also just say, "sorry I wasn't paying attention. I'm tired can we talk about this another time?"
