My wife wants to open a butcher store and make me work with her. I don't want to?

Her father is a butcher and she trained with him, but decided it was not for her and went on to work as a nurse.

Now she changed her mind and wants to open her own store + processing plant.

I support her ambition, but I don't want to work with her, simply put I already have a rewarding career and cutting meat does not (no pun intended) cut it for me. She says she'd like me to run the administration of the store, but I simply don't want to. How can I tell her without making her feel unsupported? It's her thing and I respect it, and I think it should be her own.
