This always makes me feel ignored and stupid. Even if I'm trying to talk to someone, he will talk over me to try and answer of behave of me.
I am right there I can answer for myself. What should I do about this behaviour?

Just tell him you got it. Give him a few seconds to quiet down and then answer on your own.
Alternatively just bring it up like an adult to him privately. You appreciate that he has your back but feel the way you do and so if you need help or such you two can come up with a system for it.
I frequently speak for other people. It is not meant as anything bad. Sometimes I just happen to know their answer and showing that can be a fun way of saying "Look how well I know you!", sometimes they seem busy or might appreciate a bail out. Sometimes I just enjoy hearing my own voice (I have a lovely voice!). Regardless of situation, if someone alerts me to it I'll still control that. But a lot of things are just habits with good intent - or a lack of thought.
Need to say to him what you are saying to us ⁉️

He wants to show he is the "man in the house" but he forgets that without the "neck" the Head can fall anytime.
Tell him to stop. "Do not speak for me." This is extremely disrespectful. If he can't control himself, it feels like a deal-breaker to me.
Tell him it bothers you
