Why do people always blame the person who left/leaves, painting them as the mean, selfish one who didn’t value the other person?

Sounds like a lack of introspection. There is always blame on both sides. Some people consider what they could've done better. Others whine about how she/he done 'em wrong.

In the former, that person may have a chance to enter their next relationship as a better person.

Because it holds a mirror to their face and forces them to self reflect. Most people are resistant to change. It is simply easier to blame another and continue the current lifestyle than consider ways to better oneself for the future.

I've discovered, regardless of one is a man or woman, most people want to feel they are right and they'll do whatever necessary to defend their world.

People don't always do so. I have never blamed a girl for leaving me. I know I can be eccentric and difficult to deal with romantically. But those who do likely do not accept responsibility for may of their shortcomings.
