Honestly, just measuring her hand without asking would kinda be creepy. My advice would be to just be upfront about it.
Why not send her a message saying you wanna make her something special for your anniversary since you're long distance? Tell her your idea of knitting mittens but that you need her hand measurements to make sure they fit right. I'm sure she'd think it's really sweet that you're putting in so much effort.
Ask if she could measure around the widest part of her palm and fingers, then around her wrist bone. Make it clear you only need the numbers and don't need her to like send photos of her hands or anything weird. Any decent girl will understand, especially if you explain it's for a gift.
Sneaking around behind her back won't end well bro, trust me on that. Girls love when guys are honest and communicative. This shows you putting in real effort to make her something personal. She'll appreciate you just asking upfront instead of being secretive about it. Good luck, I'm sure she'll love the mittens!

Wouldn't the logical choice be to examine gloves/mittens that she already has?
