I'm a retired jeweler, store owner.
Rings can easily be resized.
And she may want to wear it on a different finger than the one you sized it for.
One thing to keep in mind is the stores return policy, some will not accept a return if it has been sized.
Ask the store what their return policy is.
The average women's size is a 6 or 6.5.
My store was in a rural area, so women there had larger fingers.
I included the 1st resize with the purchase, some stores may not.

You can "borrow " one of her rings. The jeweler has a device that will determine ring size. There is also a finger measurer that you can use when she is asleep.
You have to ask as there is no other way to find out. If you don’t want to ask, it’s possible to get an affordable necklace for the same price, so long as it’s not too thick and does not contain diamonds. You don’t want a very expensive necklace because people might assault the owner to steal it. Pearls and silver work because people don’t know if they are real or fake so you won’t attract dangerous or jealous thugs who think violence is okay.
I think instead of a ring, do another piece of jewelry as a present. Save the ring for the engagement so that it holds weight and means more.
In order to find her ring size, you could always steal one of her ring finger rings and take it to a jewelry store and have them measure it. There’s also templates that you can print online and see which size it fits.
