You need a reason to dissolve a marriage, and permission to see anyone else. This is important if you have children. Imagine having kids with someone and they can just dip without ceremony. What do they owe you other than a check and a birthday card? Nothing, you're a girlfriend. Plenty more where you came from. Likewise if I want to step out. Maybe I don't feel like using a condom. Who are you to say boo to that? Did I take some sacred vow in front of your family? No I did not. You can sit there and not like it.
Sure, you can do all that to a wife or a husband too, and you can be nihilistic about it and say none of that matters either. But your family won't take kindly to it, and your friends are going to keep you at arm's length. Marriage matters to people, even and especially to people who haven't managed to pull it off, because at a minimum they remember growing up with friends whose family stuck together and carried the fire. Chances are you looked forward to spending time at that house. Everything was in order, everyone was calm. Parents who stay married make that happen. Sure, you can do it without being married, but you don't have to. Either of you can wander off without a good reason. That's your god given right. You never promised anybody anything.
