My boyfriend and I want to get married and have children now that we've graduated college (ofc after he gets a stable job). We've been together 4 years. He wants to have a family with 3 children, whereas I'm fine with just 2. He's practically begging me to agree to have 3 kids, but I don't want to since it's gonna be too much for me, and I've always wanted a family of 4. I really don't know what to do. I've told him multiple times that I'm not comfortable with having 2 kids (I'm not judging those who do, it's just a matter of preference). He even said he wants to have a 3rd kid by the time we're 38, when the conception chances are extremely low. I really don't know how to tell him that we'll be happy even with 2 children.

This is completely understandable, however keep in mind this may change his perspective on a marriage.
If your completely set against a 3rd child, but he is dead set on having three, he may choose to end the relationship and find someone he feels is on the same page.
Communication will be key here. To clarify, neither of you will 100% know how you will be feeling after the second child. You could discover you want another one and he may decide he is against it. Life has a way of throwing curve balls at people.
You both may want to consider just seeing how your lives progress without setting stringent goals. Be open to discuss and maybe compromises such as adopting a third child instead of birthing IF you both agree.
