If her response is to say "okay well have a good night" she doesn't love you, doesn't care about you. If however she offers to come over, hang out, bring food or make food, she loves and cares for you.

Situation 2. You have a planned date night. On the day of she calls to confirm, you tell her you just got off of work, and a financial situation came up and you can't afford to go out tonight. If she says "that's okay, we can go out another time." she's not into you, and likely sees you as an ATM. If on the other hand she says "that's fine, get a shower, we are still going out, my treat" it shows she sees you as more than a wallet, that she loves you and cares for you.
