The reason really depends on the person, but in general there are three reason to use the "old" pronouns as you put it, aside from the usual mistake/slip. The first is that someone actually knows the trans person from before and it's just habit/reflex. The second is that they have an issue with the person for whatever reason, be it a phobia (fear), a grudge, idiocy, maybe they just don't like the person instinctually, etc. The third reason, which is where I fall in, is accuracy. It is a fact (scientific/medical/biological) that trans people don't actually change genders. The surgery only make the person look the part, as in simulates the appearance and feel of the opposite gender, no more nor less. But a simulation is not real. The person doesn't grow the other set of reproductive organs, they just have their own manipulated to look and feel like it. A trans female cannot get pregnant due to the fact he does not have a female reproductive system (womb, ovaries, vagina, clitoris, etc.). A trans male cannot impregnate a woman, due to the fact that she lacks a male reproductive system (testicles, sperm, etc.). Hormones won't magically change a person to the opposite gender either, they only help the body in certain ways, such as changing hair and skin in certain ways. It would take genetic manipulation and/or reproductive organ transplantation to truly change genders. A trans female is still male biologically, so masculine pronouns still apply and are accurate. A trans male is still female biologically, so feminine pronouns still apply and are still accurate. It does not matter what you think you are, what matters is what you actually are, gender is not assigned, it is observed, you're born with it, period. You're gender identity is entirely up to you, but that does not change your biological gender nor your species. Identity is about who you are, not what you are. It's like a mature dog that thinks its a puppy, it'll act like a puppy, maybe even sound like a puppy, but is not. Think of feral children (kids who were isolated from other human contact) who are usually, but not always, abandoned in some way and taken in by animals, they act and sound like those animals, they may even look like them a bit, but they are humans biologically. Think Tarzan, he was raised by gorillas, but he was still human despite acting and sounding like a gorilla. I'm a mechanical engineer, I'm trained to solve problems using mechanics, but I can only do that if I have accurate information. Just because a person looks, talks, and acts like a certain gender, does not mean that they are, and that affects everything, from studies to medical treatment to physical capabilities. If I don't have accurate information, I could design something useless, or worse, something that is not stable and therefore dangerous. Would you want the architect that designs your house to ignore the terrain it is to built on? Say he designs your house for the beach, but you are building it in the middle of the mountains, do you think that will end well? Accuracy is important, and I prefer to be accurate instead of courteous or politically correct. I also don't care that much conversationally though, so if they want a a different pronoun, ok, but I will use the accurate term for official use, as in filling out forms, reports, etc. Lets people know who and what they are dealing with. Also, I can't stand people who prefer the pronouns "They/Them", it's plural, as in more than one, so only way I'll accept that is if they have multiple personalities, multiple heads, or are conjoined twins...

It becomes quite confusing if there is no line of demarcation. In 2014 Ellen Page came out as gay, not Elliot Page. Though there was likely an Elliot Page before WE knew about it, or maybe there wasn't, everyone is different, calling "Ellen" a "dead name," is troublesome.

People are born with all manner of chromosomes that don't match up with their mental or physical states.
There are people who are born "between".. but who mentally believe they are one or the other gender despite how that gender is physically manifested on their bodies. It's called GENOTYPE and PHENOTYPE. What your genes say might not be expressed by what you look like (phenotype).
What you look like USUALLY coincides with WHO you feel like... You LOOK like a woman, you FEEL like a woman.
For some hermaphrodites, they can feel either way... and some had gender reassignment surgery before they were old enough to know HOW they felt and their lives were RUINED...
At least now people are being given a choice. This is only 2-3 percent of the human population who are this kind of different.

Adults need to decide how they want to live their lives and what makes them happy. The first transgender surgery person, Christine Jorgensen lived an ordinary life. She lectured on her experience, and spoke about it, but otherwise was not in the public eye and she was happy.
That is all that is important to Elliot Page. Hopefully, HE will be sure of his choice and happy about it and it will profoundly improve HIS life. It doesn't matter what SIZE a person is. There are small, petite MEN too. They are unusual, but they exist. A tiny percentage of them are XYX, or XXY. Some are XX. That 2 percent.
The 98 percent of us who aren't need to respect that minority and let them be who they feel they should be. And be comfortable with the choices other humans make, though they are not what WE would choose. Remember. WE DON'T NEED TO CHOOSE. We're ordinary. All our geno and phenotypes align. How lucky we don't need to do anything extraordinary to be ourselves. We are what we were born with. Try to accept that for Elliot who's been through a host of changes.

Those plastic surgery operations all have to do with altering what was naturally bestowed on a person. And they seem to improve how a person feels about themselves. Transgender people are doing the same thing: changing how they look to change how they feel.
What they're doing is far more drastic and they could, just as other plastic surgery clients, lose their lives during such surgeries. BUT, the big difference is it has to do with an external SEX change: not just propping up sagging this or that, or too small the other.
There is gigantic OUTRAGE at people who want to switch sexes, at least as much as it can be done with hormone therapy and surgery. If a nose job or butt implant is done, the person who exits the surgery still has the same sex organs they entered the procedure with. There's no penis or breast removals, no building of a vagina or penis where there was none before: so hormonal support for such changes.
Those who don't want such surgeries seem stupefied and ANGRY at those who do. This is something I patently do NOT understand. What does the choice to DO these changes have to do with YOU? How are you directly affected?
Sure there is the sports issue. That one is problematic. But the BATHROOM issue? Who's going to know who is who? If everyone quietly goes about their business entering and exiting stalls, how will this impact the rest of society?

Firstly, as a society, people are not accepting and tolerant of cosmetic surgeries no matter the “need”, so what makes you think people will start showing empathy NOW when it comes to the cutting of penis to form a vagina and the rest that comes with it?
And do you know WHY? I’ll tell you the REAL issue I can think of when it comes to transgendered people. For me, it comes down to my kids. I don’t want my future kids to be part of a society where that sort of retardation is normalised. See THIS is why there should be years of therapy before anyone makes the final choice to switch sexes. I don't mean go under the knife. I mean live life AS the other sex. This used to be the protocol. Now they rush people into being other-sexed as young as 10 and 12 years old.
I suppose there are those few who know that they are transgendered. But it IS the flavor of the month right now. The new IN thing. Many are calling themselves transgender, asexual or non binary. I think these are labels that are tossed around willy nilly. And late adolescence is a time to try on new identities, so people call themselves these names.
The comedian Eddie Izzard calls himself transgender, however he is only a cross-dresser, or transvestite. He refers to himself as a "he" and is not interested in changing his body part or taking hormones. He loves dressing in women's clothes and has been doing so since he was 4 or 5. That defines cross-dressing.
People who are mentally healthy occupy every category, though the struggles of some trans people means they haven't worked out all their issues. And, as I started out saying, people who are seriously transgender need to get years of therapy to resolve their being so different from the mainstream.
I can't persuade anyone to wear board shorts and T shirts like I do 95 percent of the time. Am I transgender? No. I like being relaxed and I don't like wearing dresses. I shop in the men's departments because men's clothes are better made and last longer. And I'm fine with how I look in them. I dress up for funerals, weddings and graduations and special occasions. Heels and all. Otherwise I'm in hiking boots and board shorts and Ts.
There's nothing wrong with me. I've accepted how I like to dress and if others are confused, well they are. I don't pull out ANYthing in the bathroom and have no desire to use the men's room unless I can't get to the women's room before having an accident and the men's is empty.

Again, the 2 percent of people who are trans and mentally healthy are not a problem. The mentally healthy are about eighty percent of the population. So there ARE mentally unstable trans people. But the percentage of them makes them some tiny number of people.
The solution is to make transgender feminization and hormonal treatment NOT DONE until people have at least 3 years of psychological therapy. People should be happy with their choices and not leap into something THINKING it will solve their problem. Therapists will help with this.

It is a very rare occurence, and it seems there might be some wires crossed because of some genetic snafu that makes these very few people this way. In all the REST of their lives, they are normal, so we're NOT talking MENTAL ILLNESS.

There are ALL MANNER OF PEOPLE, the few that there are, who are along a SPECTRUM of male and female and want to be recognized. Non binary etc...
Some of it is micromanaging the gender issue. I don't know why it has to be so divvied up. It's not for me, but I don't have these feelings and never had. I don't want people who've worked through years of therapy, etc.., to feel they cannot BE THEMSELVES, no matter how far from the mainstream that SELF may be.
We're all quirky in one way or the other. Gender difference desire is pretty far off the track. But it exists, and I'm going to respect someone's choice. No one deserves to be miserable in their life.

I don't care about people using othered restrooms, i. e., women's gym changing rooms and bathrooms, as long as their modest. Women's bathrooms have STALLS. There is no OPEN urination anywhere. So what does it matter who's IN the stalls.
It's the same with gym changing rooms. There are stalls and showers that women can change in. No one has to see any part of their bodies. I don't see this as much of an issue with women..

And it's completely normal and has existed forever that people chose to be the "other" sex than they were biologically born. Native American tribes had men who lived as women.
