It's not a matter of constitutional law at federal level. Measures in place during a public health emergency (and there still is one) are matters for the states, and have been all along. New York's state constitution, state laws, and city government mandates are what's at work here. If you don't live in New York, you are not affected by any of this, and you simply have no dog in the fight.
There's no HIPAA violation involved. None. Period. Not even close. One commenter made the best analogy yet, it's the same as being required to show proof of insurance during a traffic stop. All you're showing is that you meet the legal minimums for liability insurance, nothing more - no record of other insurance, or billing history, or previous claims that may have been filed. I can ask hunters on my property to provide proof of insurance to drive their ATV's on my land.
Being "asked" to provide anything is not a violation of anything. Businesses are not acting in agency (or as "actors" of government) by asking for vaccine proof. They are required to comply with laws and ordinances, just like individuals, and they often bear the liability (heavy fines, being shuttered, etc) for noncompliance. You may choose not to comply. You may refuse to show proof of vaccine, you may refuse the vaccine, nobody cares. Hell you can even stand and lecture the business staff and give them a piece of your mind. But if you don't provide it, say at a dining establishment, the restaurant has a right to seat you - outside - or ask you to leave the premises, and even have you removed by force if necessary.

Soo we are left with an over rushed vaccine that is unknown of it's true abilities or lack of ability since it was not studied enough and even recently has been generating new information of how well it truly works. 🤷

Schools and hospitals have demanded vax records long before covid. Private businesses didn't have rampant pandemic making them care about your vaccination records in the past.

What's getting left out of the discussion here and elsewhere is that asking for vaccination proof, be it for entry to an establishment or for employment, is extremely limited in scope - it is not an intrusion into medical privacy. Once that vaccination status has been establish, the transaction is over. There's no collection, retention, or sharing with other entities. The "liberal" concern over proof of vax is that it will be collected, and will be shared with government entities like ICE who might use it to track down and ultimately deport illegals in the country. It's a lot like providing a school with proof that a child has had a physical and is medically cleared to participate in sports and other activities; the schools don't want the specific findings of the doctor's exam or lab results. It's merely a statement by a doctor (or nurse practitioner) that a physical was completed, and the doctor found nothing that would make the child's participation in whatever sport a health risk (it's more a CYA for the schools). TSA may ask passengers before going through security scanners if they have artificial joints, or a pacemaker (some scanners will cause pacemakers to function erratically) - they are medically-related questions but are narrow in scope and for a very specific purpose. And they're not retaining the information. If you have a child with a life-threatening food allergy, the school needs to know it so that they can comply with the ADA, and provide safe accommodation for the child; moreover, the school nurse needs to know what to look for if there's an adverse reaction. The list goes on and on. And any discussion about businesses becoming government "actors" by requiring vax proof is just pure hokum.

Theee are some short term side affects but not everyone is experiencing them, The really bad short term affects of the vaccine seem to be mainly occurring in 25 and younger. Now a 1977 court case got the Supreme Court to acknowledge that medical documents are protected under the 4th amendment (the right to privacy). And since vaccines or a medical procedure they would be protected under that law.
Now there is a conversation going on in the republicans party about weather or not businesses should fall under the same restrictions as the constitution gives to governments in the United States. I’m on board with the yes businesses should fall under The subjugation of the constitution. Like Facebook cracking down on free speech. Vaccination records are not a HIPAA violation. You would be simply presenting a card that shows proof, no other medical information. Also most schools/camps/colleges require certain vaccines/shots/booster shots in order to enroll. This would be the same situation. So there is likely a chance that you’ve complied with vaccination guidelines in the past - this would be the same thing, just at work.

Supreme Court case affirmed that medical records are protected under the fourth amendment as private information). A business cannot force his customers to show that they vaccinated it is literally illegal for them to ask. And yes actually it was rushed most vaccines that are made from scratch take typically 5-10 to properly develop. While recreating a vaccine that already exists takes 2-6 weeks, clearly it wasn't the latter.
And also yes the vaccine is experimental that's part of why the FDA won't approve it is due to it's experimental label. Another reason why the FDA won't approve the vaccine is because the interim data only shows that it's safe and effective for only about three months. For full and proper approval the FDA requires at least six months of efficacy data to review showing that it's safe.

Ironically, these vaccine passports disproportionately affect black people, a greater percentage of whom have refused to get vaccinated, than any other ethnic group. Given their history of being experimented on, I can certainly understand their hesitation.
But now these people are disproportionately going to be excluded from certain elements of society because they haven't been vaccinated... sounds like second class citizenry to me.

HIPAA: requires your permission for your medical to be shared by your doctor's office or health insurance.

The fourth amendment doesn’t apply to private businesses. It applies to government entities. In the case you cite, the court actually upheld the constitutionality of a state mandate requiring physicians to report certain medical information to the state. That doesn’t exactly support your case here. Besides, you can still keep your vaccination status private if you choose to. You just won’t be able to enter certain businesses with NYC.

The Constitution is a framework for government and lays out limitations on governmental power. It doesn’t apply to private businesses. For one I’m glad I’m in the office inside of the country although I fear half the the state will fallow NYC example. The court case mention did say that the government is allow to know who takes certain medication‘s like Oxsee cotton. However that is a more liberal interpretation of the constitution. With 5-4 justices being conservatives it is likely that if this went to court the Supreme Court would take my side in this case

Nobody is forcing you to share your private information, it's just a requirement to use that particular business. Most will provide some kind of curb-side service as an alternative.

Only those organizations who already handle and have access to your information are subject to HIPAA.
Vaccination status is classified information, however such can be freely shared with your authorization.
And that's all it comes down to- a business asks for your vaccination status (not violating anything in the process) and you can CHOOSE to either disclose it or not.
It's your right to choose not giving them that information, but then it's their right to deny service to you.
Simple as that.
It is not against HIPAA to ask if someone is vaccinated. You should be asking lawyers instead of this place cuz it sounds like you just want validation of your beliefs. And other than that why would they ask for your medical records? Do you have a skin condition that forces them to ask?

My work just announced this too. They said if you've been vaxed and are exposed you don't need to quarantine unless there's symptoms. Unvaxed have to quarantine.
Now last year, anyone that needed to quarantine got to use "covid days" or work remotely. This is not going to be an option this year. If you're told to quarantine, you're personal sick days are being used.
There are other ways to prove you got the vaccine besides a comprehensive medical record.
