Because binary definitions are stupid. Biology is a system that works on organized chaos but somehow, magically, it produced exactly two and NO MORE gender identities? Yeah, that is pretty much mathematically impossible even before we go into the actual biology and philosophy of the situation.

Non-binary basically just means that your definition of gender is wrong because it can't account for who they are and they are 100% correct in this.
