Why does an older man at work act protective over a young woman?

My boss always watches when I talk to other men. I can be having a normal conversation and I can just see him watching. He sometimes even comes and interrupts to make sure I'm OK.



I am friendly with everyone and sometimes playfully flirty.I was flirting with a coworker once and my boss said to me "why don't you just jump on him"..



He defends me.Someone nearly hurt me by accident and he yelled out and told them to be careful and made a huge deal about it telling this person to "look out for olivia,she's just a young woman,she;s not as strong as you"he doesn't usually make a big deal.



And I got upset at work,he found out a few days later and came and asked if I was OK. He asked me if someone in particular had upset me or if I had a personal issue,I told him I was fine and he apologized for not asking me about it sooner.



Is he being protective and if so why?is it normal for him to act this way?he told me I'm one of his favorite workers.



He smiles,we have a lot of eye contact,he jokes with me playfully etc.



Then he goes cold and I'm lucky if he acknowledges me.he has also seems a little bit nervous sometimes.Talking fast,shifting his feet,not looking at me,fidgeting,holding his arm etc.This is rare but it happens occasionally.
