Apple or Samsung?

Samsung is the lesser of two evils. Apple only allows apps from its own app store. Therefore it controls your phone and probably knows everything you do with it. I don't think there is an easy way to sideload apps from onother store. You are so limited on choice. Even has unique connectors like lightning.

Samsung not much better, but does have standard USB-C port and you can sideload other apps.

Samsung is full of bloatwares and unlocking will disable the camera.

I use Samsung and it has few built in apps I don't use. Also my Samsung Android phone, that I just use as a wifi hot spot, is unlocked and the camera works just fine. It was unlocked by the original ISP.

Another downside of Apple is the sheer cost.
