I would consider carefully counting calories from fat, because fat is one of the main contributors of unhealthy bodyweight due to the fact that it leads to most unhealthy situations like blood clots and heart attacks, but ideally, you should count all the calories from all the important organic compounds in your body, because that is where you will need to find out how many total calories you need to lose to lose weight overall and the kinds of proportions of calories you will take from each organic substance your body needs to make sure you eat the right way so your body can be healthy.

Counting doesn't work. If it worked I'd be slim by now. I've been dieting for 10 years. The only thing that worked for me so far was low-fat high-carb vegan diet with unlimited calories and lots of cardio.
Might be different in USA, but in UK all packaged foods are well labelled with a breakdown of the contents. How much fat, sugar, salt, calories, energy etc.
The calory count is the one to look for. Bear in mind you are also looking for low salt and low sugar. 3,500 calories is about 1 lb in weight. If you could digest a 400 calorie slice of chocolate gateau instantly, it's the equivalent of putting on about 2 ounces in weight. At 100 calories burned in 20 minutes gentle walking, you would have to walk 80 minutes to burn off that cake!
All calories need to be counted...

Matey, Calories literally ARE your diet xD. People seem to think of Calories as being like protein or fat or carbs or something, But calories just means the energy of that item of food.
Just make sure you dont eat too few calories, in many ways its just as bad as eating too many. You need to count everything that is written on the label. Which is tricky when you making home made things.
If you're really serious about your diet, use Myfitnesspal app. Makes it easier to track your daily food consumption.
I think you count everything
Total calories is most important.
