When I've cooked for dates I normally just do a variety.
Asparagus dressed with balsamic, vinegar, and garlic in either the pan or oven.
Seared bone-in pork chops with olive oil, salt & Pepper, thyme and rosemary in a cast iron before finishing in the broiler. Some paprika is always good.
Some sort of starch or carb, normally doesn't matter. I like honey couscous with curry and currants or just a fairly basic mashed potato.
Dessert I usually don't make, there are some great bakeries nearby. If I did it would probably be something like a baked apple with maple syrup and vanilla ice cream, or you could bake fresh brownies and dollop some whipped cream or ice cream on that.
Its really easy to put together since there's no cutting for any of the components.

Do you have a 'speciality'? For example, I cooked my special recipe for pork chops and mashed potatoes for an ex. That was only $7.00 for everything.
I knew how to cook it instead of having to cook something that I barely knew how to make or would have to look up the recipes. Most people will appreciate that you cooked for them so you shouldn't have to go out of your way to cook something you don't want or are not familiar with.
Desert, can't go wrong with Cheesecake. But I'm probably being biased. :p
Do a spaghetti and make your own meatballs and sauce, easy yet affective. Could do a cheesecake for dessert, make it earlier in the day and then you don't have to cook it or prepare it whilst he's there, meaning more time together. You could also whip up a cocktail or two, mojitos are simple and tasty.
Even better, ask him what he would like you to cook, his favourite or something and go from there. Good luck!
