At christmastime there are two things that people love:Food and Gifts. Food gifts are very popular for Christmas. But sometimes the gift sets you buy are just too generic. I mean I enjoy the 2 foot long meat sticks and Hickory Farms gift sets, But let's try something different for crying out loud! So here are some ideas for homemade food gift ideas from yours truly and Betterhomesandgardens.com.


Individual Brownie Cheesecakes in jars

These jars look so cute! Plus it looks like a great & yummy idea! Here is what you will need:


2 8 ounce packages cream cheese
2 eggs
Nonstick cooking spray
12 vanilla wafers or chocolate sandwich cookies with white filling
2 ounces semisweet chocolate, chopped
3/4 cup sugar
2 tablespoons all-purpose flour
1 tablespoon coffee liqueur or 1 teaspoon vanilla
1/4 cup milk
Caramel-flavor ice cream topping
Honey-roasted peanuts and/or caramel corn
Directions:
Allow cream cheese and eggs to stand at room temperature for 30 minutes. Meanwhile, coat twelve 4-ounce canning jars with cooking spray. Place a vanilla wafer in the bottom of each jar.
Preheat oven to 350 degrees F. In a small saucepan cook and stir chocolate over low heat until melted; cool slightly. In a small bowl lightly beat eggs with a fork; set aside.
In a large mixing bowl beat cream cheese with an electric mixer on medium to high speed for 30 seconds. Add sugar, flour, and liqueur. Beat until combined, scraping sides of bowl occasionally. Stir in eggs and milk until combined. Transfer 1 1/2 cups of the batter to a medium bowl; stir in melted chocolate.
Spoon plain batter evenly into the prepared jars, filling each about half full. Spoon chocolate batter over top of plain batter, filling each jar nearly full. Place jars in a 13x9x2-inch baking pan or 3-quart rectangular baking dish. Place pan on oven rack. Pour enough boiling water into the baking pan to reach halfway up the sides of the jars.
Bake for 15 to 20 minutes or until puffed and set when gently shaken (cheesecakes will fall slightly as they cool). Carefully remove jars from water; cool on a wire rack. Cover and chill for at least 4 hours before serving.
To serve, top cheesecakes with caramel topping and sprinkle with peanuts and/or caramel corn.

A tasty pancakce mix and gift set to give friends! Include: Syrup,milk, pancake mix and fruit toppings. Here is the pancake recipe:


1 3/4 cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg, lightly beaten
1 1/2 cups buttermilk or sour milk
3 tablespoons cooking oil
Desired fruit options (optional)*
Butter (optional)
Desired syrup (optional)


In a large bowl stir together flour, sugar, baking powder, baking soda, and salt. In another bowl use a fork to combine egg, buttermilk, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be slightly lumpy;). If desired, stir in desired fruit.
For standard-size pancakes, pour about 1/4 cup batter onto a hot lightly greased griddle or heavy skillet. Spread batter if necessary. For mini pancakes, use about 1 tablespoon batter. Cook over medium heat for 1 to 2 minutes on each side or until pancakes are golden brown; turn over when surfaces are bubbly and edges are slightly dry. Serve warm. If desired, top with butter and syrup.


Christmas Macaroon Mix

This is a good gift to give for cookie lovers! You can easily give the gift in a jar to family and friends to enjoy. Here is the recipe:


1 7 ounce package flaked coconut (2 2/3 cups)
2/3 cup sugar
1/2 cup chopped almonds, toasted
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 cup chopped candied red and/or green cherries
2 tablespoons finely chopped candied orange peel


In a quart jar, layer the coconut, sugar, almonds, flour, salt, candied cherries, and candied orange peel. Fasten lid; attach directions for making macaroons to jar.
TO MAKE MACAROONS:
Preheat oven to 325 degrees F. Line cookie sheets with parchment paper or foil. Grease foil, if using. In a bowl stir together the contents of the jar. Add 3 lightly beaten egg whites, stirring well to combine. Drop mixture by teaspoons 2 inches apart onto prepared cookie sheets. Bake for 15 to 18 minutes or until cookies are light brown. Transfer to a wire rack; cool. Makes 30 cookies.
TO STORE:
Store mix in jar in a cool, dry place for up to 1 month.

Spiced Apple tea mix

This is a great idea for tea lovers. This tea is very easy to make.


2 tablespoons loose green tea
2 tablespoons snipped crystallized ginger
1 teaspoon whole allspice
1 teaspoon whole cloves
6 crisp dried apple chips* or dried apple slices
6 3-inch cinnamon sticks


In a small bowl combine tea, crystallized ginger, allspice, and cloves. Divide tea mixture and dried apple chips among six paper tea filters. Tie tops of filters with kitchen string, tying a cinnamon stick at the top of each. Place filled tea filters inside six decorative heat-proof cups. Attach directions for serving.
To make Spiced Apple Tea: Add 6 to 8 ounces hot water to filled tea filter in each cup. Let tea steep for 3 to 5 minutes. Remove and discard tea filter.

Ingredients


2 1/2 cups all-purpose flour
1 package active dry yeast
1/2 teaspoon salt
1 cup warm water (120 degrees F to 130 degrees F)
2 tablespoons vegetable oil or olive oil
Directions
In a large mixing bowl combine 1-1/4 cups of the flour, the yeast, and salt; add warm water and oil. Beat with an electric mixer on low speed for 30 seconds, scraping bowl. Beat on high speed 3 minutes. Using a wooden spoon, stir in as much of the remaining flour as you can.
Turn dough out onto a lightly floured surface. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Divide dough in half. Cover; let rest for 10 minutes.


Triple Chocolate Truffles

A great and easy gift to make & give! With papercups,plastic boxes and festive fabric you can make these chocolate truffles a great Christmas gift!


12 ounces semisweet chocolate, coarsely chopped
1/2 8 ounce package cream cheese, cut up and softened
4 teaspoons instant coffee crystals
1 teaspoon water
1 1/3 cups milk chocolate pieces or semisweet chocolate pieces
2 tablespoons shortening
2 ounces dark chocolate and/or white baking chocolate (with cocoa butter), coarsely chopped


In a medium heavy saucepan heat and stir the 12 ounces semisweet chocolate over very low heat until melted and smooth. Remove from heat; stir in cream cheese until mixture is combined. In a small bowl stir together coffee crystals and the water; add to the chocolate mixture, stirring until smooth. Cover and chill for 1 to 2 hours or until firm.
Line a baking sheet with waxed paper. Using two spoons, drop the truffle mixture into 1-inch mounds on prepared baking sheet. Cover and chill for 1 to 2 hours or until firm. Roll mounds into smooth balls.
Meanwhile, in a heavy medium saucepan heat and stir the 1-1/3 cups milk chocolate pieces and the shortening over low heat until mixture is melted and smooth. Remove from heat; cool to room temperature.
Using a fork, dip balls into chocolate mixture, allowing excess chocolate to drip back into saucepan. Return truffles to baking sheet; chill about 30 minutes or until firm.
In a small heavy saucepan heat and stir the 2 ounces dark chocolate and/or white chocolate over low heat until melted and smooth. (To use both dark chocolate and white baking chocolate, melt each one in a separate heavy small saucepan.) Drizzle melted chocolate over tops of truffles. Chill for a few minutes or until set.


Cherry Apricot Pistachio Baklava

Ingredients


1 1/4 cups sugar
1 cup water
3 1/4 inch slice fresh ginger
1/2 teaspoon finely shredded lemon peel
1/2 cup honey
2 tablespoons brandy or orange juice
1 tablespoon lemon juice
2 cups pistachios or pecan pieces, finely chopped
1/2 cup snipped dried apricots
1/2 cup snipped dried cherries
1/4 cup sugar
1 teaspoon ground ginger
1/2 teaspoon ground cardamom
1 1/2 cups butter, melted
1 16 ounce package frozen phyllo dough (14x9-inch sheets), thawed


For syrup, in a medium saucepan, stir together the 1-1/4 cups sugar, water, fresh ginger, and lemon peel. Bring to boiling; reduce heat. Simmer, uncovered, over medium heat for 30 minutes, stirring occasionally. Remove from heat. Stir in honey, brandy, and lemon juice. Strain to remove lemon peel and ginger. Let syrup cool to room temperature (do not refrigerate).
Preheat oven to 325 degrees F. For filling, in a bowl, combine pistachios, apricots, cherries, 1/4 cup sugar, ground ginger, and cardamom. Set aside.
Brush the bottom of a 3-quart rectangular baking dish with some of the melted butter. Unfold phyllo dough. Cut through the whole stack of phyllo dough sheets at one time to make a 13x9-inch rectangle. Discard extra pieces. Keep phyllo covered with plastic wrap, removing sheets as needed. One sheet at a time, layer 10 phyllo sheets in the dish, generously brushing each sheet with melted butter. Sprinkle one-third of the filling on the phyllo layers. Repeat layering the phyllo sheets and filling twice.
Layer remaining phyllo sheets on the third layer of filling, brushing each sheet with butter before layering the next sheet. Drizzle any remaining butter over the top layer.
Use a sharp knife to make four cuts through all the layers the length of the dish to make five rows. Then make eight diagonal cuts through all the layers, making diamonds. (Do not remove the pieces from the dish).
Bake for 40 to 50 minutes or until golden brown. Slightly cool in the baking dish on a wire rack. Spoon syrup over hot baklava. Cool completely or let stand overnight at room temperature. Place baklava in tin, separating layers with waxed paper; cover.


Peanut Butter English Toffee Bars

1 1/2 cups quick-cooking oats
3/4 cup all-purpose flour
2/3 cup packed brown sugar
1/4 teaspoon baking soda
1/3 cup butter
1/3 cup creamy peanut butter
16 ounces dark chocolate, chopped
2/3 cup creamy peanut butter
1 cup toffee pieces


Preheat oven to 350 degrees F. Line a 13x9x2-inch baking pan with foil, extending foil over the pan edges. Set aside. In a large bowl, stir together oats, flour, brown sugar, and baking soda; set aside. In a small saucepan, stir together the butter and 1/3 cup peanut butter. Heat over low heat until melted and smooth. Add the melted peanut butter mixture to the dry mixture. Stir until well combined. Press mixture evenly into bottom of prepared pan. Bake in the preheated oven for 15 minutes or until golden brown. Place pan on a wire rack.
In a large saucepan, combine dark chocolate and 2/3 cup peanut butter. Heat over low heat until melted and smooth, stirring occasionally. Spread chocolate mixture evenly over warm crust. Sprinkle toffee pieces evenly over the chocolate mixture. Cool in the pan on a wire rack for 2 hours or until chocolate sets. Using the edges of the foil, lift the uncut bars out of the pan. Cut into bars. Makes 24 bars.
