Your coming idea is a good one, but I know women who aren't comfortable going to a man's house for their first date. That might be a good second or third date, after trust and rapport are established.
I've had dates at: vegan/vegetarian-friendly restaurants, parks (a picnic basket will let you prepare food for her without making her come to your house for the first date), a bowling alley, sporting events, a mini golf place, an arcade, amusement parks, a skating rink, an axe throwing place, etc. Really a surprising number of things you'd do for fun anyway make great date activities. If you give her some of these ideas and let her tell you what she's into, you might learn a little more about each other before you even have the date.

The good news: you still have two days to find a different one :D
You could still take her out to a restaurant but choose somewhere with vegetarian options. There’s always at least one vegetarian option at most restaurants.
