For example if a guy shows signs he’s into a girl, do girls sometimes act like they didn’t get the hint and play it cool but in fact they’re interested but don’t want to seem like it, and why?

It's called 'playing hard to get'. The thought is that the guy will try harder. In reality, it just appears a lack of interest on their part, so they lose out. Yeah, it's dumb, but hey, it is ALWAYS and ALL about the FEELZ.
