Why do so many people, when they change their mind about something, act like you misinterpreted them instead of just saying their mind changed?

It's so demeaning and insulting to my intelligence. Just say you changed your mind, it's okay. I can't think of a single time where it would be a problem to just admit that you changed your mind about something.

Don't want to date me anymore? Okay.
Don't want to take the job anymore after signing papers? Okay.
Don't want to hook up anymore? Okay.
Don't want your photo taken anymore? Okay.
Don't want to turn right after using your turn signal to indicate that you're about to turn right? Okay.
Don't want your girlfriend flirting with other men? Okay

There literally isn't a single situation where anyone will treat you differently if you just say that you changed your mind about something. Instead people try to act like they never led you believe something and that you made a mistake... as if that somehow makes the situation better? I have literally had people repeatedly tell me and do things that any logical person would think they were going to do one thing, but then they change their mind to do something else, and they want to insult my intelligence and act like I misunderstood something. Literally no one is going to act any different if you just admit that you thought you wanted to do something and some shit changed; it's all good.

It drives me insane! Why do people do this?
