Maybe she doesn't like it because she doesn't like the fact you feel forced to give a fake gift to her you wouldn't normally spontaneously give. Being fake through these formalities might seem like a detachment if she feels your bond goes much beyond this level instead.
If you really want to gift her something I think you could pick something you would clearly gift in other moments too (so, not flowers, not a pack of chocolate candies, nothing that speak "formal ritual of St Valentine"), then you tell her you wanted to give her that earlier but since it was close to St Valentine you decided to wait until that day.
On the other side, she might not buy you anything, or prepare anything, if she doesn't like forced gifts in general. So I think you shouldn't expect anything in return in this case... (assuming in your culture both gift stuff to each other traditionally, here they do).
