Why do people think that men aren't the prize when the men women are chasing are rare?

I can certainly agree given the status of the kind of man some women profess to demand, at least 6' feet, making that amount of money, having that job etc. that they are such a rarity that they are indeed the prize. I don't think many women even comprehend how small a percentage of the male populous on the large scale are over 6' feet and how small the chances are of them ending up with one.

Depends on how you look at it. Because most men chase the woman, you could say they are the price because they're chasing the woman.

Most women are boring. If you want one thats physically attractive AND shares your hobbies, interests, goals, and personality, and has zero bad habits, that kind of woman is very rare. and in my opinion nothing else is worth having.
