My boyfriend wants me to cook for him and I’m so nervous in literally thinking of ordering a takeout and putting it in a pan and saying I made it. Like I could order chicken soup and rice and put it in a pan and then cut a side salad myself with my own homemade mint sauce..

I cook at home for the family and can provide a great pasta recipe. it's hard to mess up pasta. Some cost and time involved.
Or make a salad with rotisserie chicken on it and bread and butter.

Just tell him he can’t be upset if he doesn’t like whatever you whip up, it should be fine. If he loves you then he won’t be rude about it, just respectfully honest. It’s kind of disgusting seeing someone do something kind for another person and they act like a trash can.

It's really simple. Find out what meat he really likes, go online and search recipies and find a simple one. There are so many to choose from. Pick something with ingredients that you like the taste if. I have done this lots and never had a bad meal. Many were repeated several times as they were that good.
A sweet and sour chicken or pork dish has excellent flavors with the sauce over rice and choice of vegetables or a salad.
Don't. If you can read, you can cook. Get "The Joy of Cooking" and follow the recipes. Start with something simple. Tell your boyfriend you are nervous and that you want to please him. He WILL appreciate the effort.
He's not expecting gourmet food, but I highly advise against your little ruse there. Starting the relationship out with a charade is never a good idea.
You could try cooking something simple or make it fun and have him help.
