Aw man, that would annoy me too if random strangers were calling me sweetie all the time! I mean, we barely know each other, why you gotta use pet names?
I think sometimes people use terms like that as a way to seem friendly and disarming. Like calling a girl "honey" or whatever. But it can also come across as a bit patronizing or diminishing.
As for why they call you that specifically - hard to say for sure. Could be how you carry yourself comes across as friendly/sweet. Or maybe it's just a habit for some folks to use those kinds of names with any woman.
I'd try not to take it too personal, unless they're being creepy about it. You seem assertive enough to speak up if you want them to address you differently too. And your real friends know you well enough to earn using nicknames! Keep doing you.
