What’s this symbol stand for?

This is a modern design. Like many of Celtic symbols they have come a long way from original meanings and design. The Celtic Cross and Dara Knot aka this one are the very essence of not having much to do with any meaning originally created by Celtics.
Most of Knots information come from christian documentation which was highly subjected to changes to suit their own purposes, and knots became their influenced things. A good example is the Celtic cross in their terms was to symbolise elements, but of course when Christians showed up they shifted it to be about jesus dying when Celtics couldn't of cared less about that lol.
So depends what you are looking for from a Celtic view this was probably a symbol involving nature like akin to a tree roots but we simply don't know. If your looking for a christian view it's about strength, mostly strength in faith that kinda thing.
Looks like someone was trying to be creative at a pretzel making competition
It's called an eternity knot, you can trace a neverending path along it. In the olden days when you got married a long ribbon was used to tie the couples hands together using this pattern. Hence the term 'tying the knot'.
Just looks like a simple Celtic knot to me. Either that or it’s the thing from the never ending story.

It is a Celtic Knotwork necklace, but I don't know the meaning behind it.
