I really wanna text with her over the weekend but she's such a short/dry texter and left me on read the last message?

Last weekend we had a plan to hangout at her place but she texted me that her sister was in town and she was gonna spend time with her instead. I said no biggie and left it at that

We were talking a lot during the week in person, especially yesterday, some flirty vibes and touching. Though on Wednesday she looked sick and I texted her to see how she was doing and I got no answer. That's the last text between us, a non response

So I kind of want to ask her if her cat is doing better or send her a funny picture or an image or where I'm fishing this weekend or whatever just to continue talking to her as I really enjoy her company and she seems to also. But that last non-response troubles me

The problems I see here are: 1) She turned down the invitation to hang out but didn't suggest a new date to make up for it. 2) She left you with no response from Wednesday, which is strange because she might have reopened the chat to make sure she replied if she actually wanted, so I guess she either forgot and didn't check the chat for so many days (and it's not good) or she actually didn't want to reply anymore for unknown reasons (bad too). 3) That you are thinking about excuses to start a new conversation but she didn't start any from Wednesday, that puts you already in disadvantage. 4) You call her a short/dry texter. Rarely someone is really a "dry texter" but it's rather the situation that is not "as" interesting for them, unfortunately.
Among these, the one thing that makes me think you're not on the same page is that you call her a dry texter. Which means she replies without adding new questions, inputs, doesn't put much effort, doesn't initiate conversations etc. These are in my opinion worst signs than forgetting to reply once, and you risk to build fantasies on biases if you think she is a dry texter "by personality" because you don't want to think she isn't enjoying enough...
The key to make things successful (in general) is to keep things balanced and to not build scenarios in your head without her participation. So, if she is putting something, you get the ground to put something else. If she doesn't, you don't increase more with more investment (also because the more you do for someone, even just spending mental energies on them, the more this person raises value to your eyes, and you lower to hers because she didn't have to take any step to get that more attention from you).
Wait always for her initiatives and participation too. If those things don't come, then don't proceed with further steps as it's the path for unbalancement and crushing.
Stay anchored to the reality of what she really given so far, not to the fantasy of what she could give "IF". See the past feedback as the only solid ground, the "if" hides traps because it makes you behave like if she actually invested something and you just waste and go unbalanced more and more.
Now you are at 1 step from starting that trend because you're about to respond with "giving more" to a "giving less" from her side; just don't.
Let her chase you too, let her figure things in her mind, let her feel the desire to talk to you, let her put more value in how she sees you by letting her invest more energy into interactions with you.
If you are 31 I doubt she is a teenager so you don't really have to deal with "extremely introverted girly girl" who is so shy she wouldn't be able to find any occasion to talk with someone she likes. I'm pretty sure she is not of this kind, and that all you have to do is to let her have space to take her steps instead, she is probably way beyond mature enough to know "how to".
If she enjoys talks, then if you withdraw a bit being busy with your stuff, she will refill the space at some point. If you meet in real life because of job (I assume) then you don't risk to be "forgotten", but rather she will keep checking you out to "figure" things in her mind.
And don't send random memes because it will be pretty obvious you sent those contents only to request her attention and not because of a specific reason. For example, sending a meme about something very specific you laughed about recently, looks like:"I saw this meme and of course I thought about that thing we talked about, it's so specific it's the first thing that came to my mind". Instead if you send a random meme that is just generically funny, it's like saying:"I want attention, so I send a generic funny cat, please give me attention and introduce content because I have none, I just want attention". So be very careful about not showing you're looking for excuses to get more in contact with her, for me these are turn offs, I'd perceive a risk of clinginess.

I can't grant anything because the dry texter thing isn't promising and if she already made her mind up about not considering you a potential date then there isn't much to save, but definitely the approach I suggested looks like a safer path to increase chances (if there are still some) rather than investing more (especially than investing more as a response to her lack of interaction!).

No! No! No!… sorry to say this… but not one day, or even an hour, perhaps even minutes does someone not look at their phone. So if they have not messaged back let’s say within 24 hours then forget it!
If they don’t have the seconds it takes to reply to you…. They don’t deserve your time.
ALL of us question why someone hasn’t messaged back… etc. etc.
But it’s simply because they don’t care enough to reply. So sad
