Quick one - Salt isn't a spice, it's a mineral.
Herbs are generally leaves, and can be used fresh off the plant, so you still get the usual suspects - oregano, basil, thyme, rosemary, dill etc
So we can see that we have a lot of flavour options already.
Spices are grown and extracted from plants and requires processing of some kind, often drying, but can end up being roasted, or ground
So to pick only one spice? Probably Cumin, because with that I get the option of ground or seed, so it's more adaptable.

Tumeric because curry dishes are yummm and it’s an anti inflammatory.. and I can paint my body with it if I decide to get crafty
Saffron, i can make drinks, sweets and a meal using saffron, example
Saffron milkshake , saffron milkcake and saffron rice sweet porridge
Black pepper goes well with almost anything. Of course Id still be using salt because technically that's not a spice but a mineral.

Salt, obviously. Unless you don't count that as a spice. In which case it'd be curry because with curry you'd still get a huge variety of flavors.
Probably pepper since it goes with most things and salt is not really a spice so I can’t choose that unfortunately
