actually cooking is not my hobby, and i'm still noob lol, but i'll cook if i want to, lastly i tried making churros but failed to shape them, I don't know if i lacked ingredients or what, but in the end it turns out as mini donuts.
but it still tastes good for me to eat, more yummy if having sweetened condensed milk as a topping.

The toughest recipe for me is the roux for a gumbo. You can't make a good gumbo without a great roux, and a great roux takes time. There are shortcuts, but they're never as good. What you need is an electric mixer that will slowly stir the roux. It takes about 2-3 hours to get it just right. I did that once by hand, taking breaks, and I won't do that again. But it was worth it. The gumbo was the best I've ever made. I won't make it again without a stirring machine!
Well I just finished slow smoking a caribou roast and ribs the Inupiat recipe for the first time unassisted except for text message. By far this was the most difficult thing I have ever cooked.
I am not Inupiat but I have a friend who is. I live in a suburb of a metropolitan in the USA and built an Inupiat traditional smokehouse in my yard.
Use to make a vegan baked cheesecake at work. It was the most tedious 2-3 day process. You had to soak cashews in water for 24 hours, then blend them, strain and blend again, mix with tofu and other ingredients. Bake it for like 3 hours. Then let it cool and set overnight.
The last time I made it the spring form tin popped open and the cheesecake went splat on the floor. I cried and never made it again 😂

It took me a while to perfect my homemade Alfredo sauce. The first time I made it, it curdled and I cried lmao.
Recently, it was trying to make souffle's. I tried 3 separate times and could not get them to rise. Eventually I got it, but now have no more desire to make them. It further confirmed to me why I really enjoy cooking but detest baking.
I would say it was a 2 day curry dish that a neighbour gave me the recipe for. It was absolutely amazing but not worth the time. It was a long time ago and I'm trying to remember the name of the dish now.
That cake is 1000x more difficult that roasting some meat.
I've spend most of the last decade or two cooking multiple meals at the same time for picky eaters. I choose quick, easy, and as little washing up as possible.I think the toughest thing to make is a turkey I mean you have to cook it for hours and keep an eye out for it so it will be cooked right. It's tough work.
The hardest thing I ever cooked was cabbage soup without cabbage and also when I tried to make a ginger bread house unsupervised as a kid with no cooking experience whatsoever
I always think it's going to turn out awful, but then rock it. I really have no clue how. I only believe people because they come back for more.
I use to overbake Chicken now I figure things out and make it way better but it took me some time cause I can't let the meat dry out
I only cook when I need it. So I have nothing to tell.
