I prefer gas.
I was raised with a wood stove. Was kind of hard to adjust the heat on an old wood-burning stove, as both my mother and I observed.
In my teens we upgraded to propane, then natural gas. That's about the time I discovered how nice it is to be able to adjust heat rapidly with just a twist of the wrist.
In my twenties my mom married my dad, (I was adopted at age 21 by him) and he had an all electric home, in which I learned that electric may be safer, did not need pilot lights, and worked as long as Edison was pumping out electrons.
Returned to gas when I bought my house. Still prefer gas for cooking and baking, even though the pilot lights sometimes tend to blow out. My stove works even when a car hits a power pole or a storm hits a transformer.00 Reply

I lived in Idaho briefly and the place I rented had only electric heat, and it was near $300 dollars a month to heat it at the lowest setting possible, 55.

+1 yGrew up on gas stoves and have no issues with them except they aren't the best at efficiency, but I love seeing the flame and controlling heat VISUALLY. It's like using a modified open fire. A bit primal and interesting.
I'm a moderate and I think the move to go full electric is about saving energy and being more energy efficient. There are snags in this process, however. If we are all heated and have all electric cars, what happens during power outages? The electric grid. Think of Texas last year! People could freeze to death with extensive outages, or die of heatstroke. So much has to be upgraded before all of this is a reality.
If all our cars are electric that means we have to have charging stations and the time to charge the cars at our homes and elsewhere. Infrastructure that doesn't exist today. There are many kinks to work out before this is remotely possible. Maybe in 10 years, but not today. I think hybrid gas/electric cars will make a giant difference but they are still extremely expensive. And THIS is the rub. COST.
Most people cannot afford this today. Our country is NOT set up FOR it. It has to be phased in as the infrastructure is phased in. Just as total gas cars have to be phased out over time. Remember leaded gas? Of course you don't. You were born after it had BEEN PHASED OUT. And there is STILL some lead in gasoline so it works properly.

Personally I prefer gas for the instant heat, but it's also true I have something of an OCD thing going on where I get a bit uncomfortable when I'm using something that could run out. This is true of both gas and electricity but much more so for gas. Gas allows an instant change of power whilst the ceramic hobs I dislike take a while to heat up or cool down. 10 Reply I actually gave my mom my old Samsung electric stove paid about 2 k for it like 3 years ago. pretty much brand new.. Paid 3 k for my propane gas stove. I live out in the country and electricity can go out like how we had a 100 + km wind storm about 9 days ago.

+1 yI'm not super picky, but I will say that inductive ranges are really neat. As far as the oven part is concerned, I like a convection oven. It basically turns the oven into an air fryer.

+1 yGas is better for cooking some things, but it's not that big a deal to me. I have one residence with a gas stove, another with an electric one. Eventually, all energy on this planet will have to be renewable because fossil fuels won't last forever.
