There was a chili cook-off a couple of years ago. I didn't know how to make it. I love chili. So I entered anyway. I figured I'd make myself learn how to make it.
So I started searching recipes.
I found three Texas style recipes. I reviewed all of them and combined the concepts and techniques and ingredients.
Learned how to make a chili paste. Learned that bacon and cubed beef and 80% lean ground beef were an awesome combination (anything leaner than 80% made the ground beef too hard compared to the other meats). Learned that after touching all those chili peppers and jalapenos not to touch my face or mouth until I'd washed my hands with soap about 5 times.
A little finely ground cornmeal thickens the chili and gives it a slightly sweeter flavor.
Maple bacon gives it a slightly sweet flavor as well. Marinating the beef with a little liquid smoke for at least 24 hours gives it a flavor, like it's been cooked over a wood fire.
The chili paste came out perfect. You get the full flavor of all the meats and corn and maple and the heat slowly builds just to a point without burning your mouth. The heat goes away in about 5 minutes. no milk needed.
I call it "Slow Burn".
I didn't win, I didn't even place.
It was Texas style which means no beans. Judges were expecting beans.
But after the judges were done everyone else in the unit was free to eat all the chili present.
Mine was the only one that was completely gone. Guys were scraping the Crock-Pot just to try it.

I made some two weeks ago:
2 lb spicy Italian sausage browned with a large, coarsely chopped yellow onion and at least 6 large cloves of chopped garlic.
Three jars of Classico sauce - one each of Four Cheese; Spicy Pepper; and some other flavor like Portobello, crimini and champignon mushroom.
2 (6") zucchini - shredded longways.
Home made Italian seasoning made with herbs that we grow in our garden.
A dash of cinnamon. (adds richness and complexity without any cinnamon flavor)
About a cup and a half of good red wine.
2 cans of diced tomatoes added at the very end after the sauce has simmered for a while.

+1 yI like home made egg drop soup more than restaurant ones cause the ones we make at home uses more starch and does not having the annoying mushroom and message they use.

+1 yHomemade almost always tastes better. Using my grandma's recipe I can make a blueberry or cherry pie that tastes better than any in a restaurant I've ever had.

+1 yI make a very good Italian Beef, far better than Portillo's (easily done), and right up there with Buona Beef.
I can make a variety of stir-fry dinners- many of those from restaurants are so similar - -
From a basic roux, I can easily make finish sauces, Alfredos, cream of ______ soups, etc. Now, mine might NOT be quite as good as restaurants on these, BUT, when I can make it for 30-50¢, and a diner charges $10-15 each serving, I am perfectly willing to be second-best and save the $14.50 for gasoline! ;- )40 Reply

Mushroom Risotto is one, as I can get it to just how I like it.
Curry, I like making my own curry and will bulk make for the month.
However my big one that I love is my Tiramisu, I picked it up from friends that lived in Italy. It has a decent hit of Alcohol and a good expresso from my Bean to Cup Machine.
i also make a couple of versions, one with Marsala and one with Dark Rum.

Yesterday my neighbor called me & said I know you just got home from vacation & I’m sure you don’t feel like cooking so I’m sending some ribs over. I have no objections if my neighbors want to send over food & when I make stuffed peppers I send them over as well. The good news is my second week of vacation just started.
20 Reply I love my hot Italian sausage, peppers and onion Lasagna with homemade sauce. I generally make it like every other month or so for family members or friends 5lbs Hot Italian Sausage 2lbs Ricotta Cheese, 2lbs Mozzarella seasoned my own blend, 1lb Lasagna noodles about 4lbs various tomatoes and sauce in general it is an all day project for the family in the end it produces 12 1lb slices of Sausage Pepper and Onion Lasagna Lol

10 ReplyNobody is gunna make a pasta as good as mine. Not for me anyway. I like a very dense legume veggie pasta with tons of protein and most places have too much pasta and not enough stuff in the pasta
