For your info, dried Champignon which grow in farms on manure cost $5 per kilogram, while dried ceps above $1000.
It's like comparison of in Vietnam widely farmed Tilapia fish and Blue fin tuna caught in Atlantic.

I have a Samsung US-Style fridge with huge freezer for such actions of my father. If he visits Norway for fishing I will get 50+ kg of frozen fish

Well, he gives for his hunting and fishing hobby a lot more money than buying this food. If you have full freezer of cod, haddock or red deer, you will lose appetite for it after few weeks.
I just take it to comfort his need of being good daddy lol

You're lucky. Real venison is great. Even farm raised but wild much better. Love your idea of wild mushrooms. Morels would probably work best as they always seem to have more robust flavors than others but shiitakes have great texture. Chanterelles also good but w/o intense flavor of morels. If yyou have any bones- sorry, not you, the vensison. Roast them and make a sauce with either a zinfandel or, if you are using any sweetness in prep, maybe port.

Venison, especially from young red deer Bucks can be used for same recaps like high quality beef. Older Stags aren't steak material.
