What kind of sauce goes best with steak?

I’m asking because I’m not a very skilled cook, but steak is something I can properly cook and I’m having a friend over for dinner soon.

Butter roux sauce. The base is molten butter and flour. You put butter in a small pan or pot with 2 TBSP wheat flour. Flour should roast golden brown, in this moment you add slowly 2 cup stock or milk or water or sweet cream, while whipping to prevent clumping.
This the base. You can add mustard, wasabi, tomato mark, horse radish or just spices there are lot of combination. You can use rye and marjoram flour instead of wheat flour for bird meat or fish it make it more rustic.

Simple mustard roux.
- 2 TBSP butter
- 2 TBSP wheat flour
- 1 small onion chopped finely
- 2 cup stock (beef or chicken)
- 2-3 TSP mustard
- pepper
- salt

melt butter add onion pieces and roast flour in it golden brown, add 2 cups stock slowly while whipping, add mustard and spices, cook it 2-3 minutes while stirring

If the steak has not a good quality - every sauce is well. But I would not have a steak low quality. It ia not joy.

If he wants a good steak he should invite you, when you don't have much money. And if he is unemployed - simply no steak. Don't let others force you to do that if you cannot afford it now.

Medium rare is tasty but difficult. I cannot cook that ;) if I want steak I go out. But it is hard to find a restaurant that is really good with steaks. Sounds simple is hard to cook.

I'm not into sauces. A well cooked steak should be juicy and tender.

Two alternatives I do use are:

Miso Marinade

Combine miso, sake, mirin, superfine white sugar. Cover steaks in two table spoons of marinade on each side. Wrap in plastic and refrigerate 12 hours or overnight. Lightly scrape off excess marinade. Bring to room temperature then fry steak as usual... not super hot to avoid burning the marinade reminants.

Pub Style

Salt and pepper steak immediately prior to cooking. Fry as usual. Serve with dijon mustard, seeded mustard or horseradish cream on the side.

For a simple, foolproof match, go with a classic pan sauce from the steak drippings 🥩

Right after cooking, remove the steak, then in the same pan add a splash of red wine or brandy, a bit of beef stock, reduce it, then finish with a knob of butter and black pepper.

Seeing as how friend likes it medium rare, there will not be a lot of cooking time to break down tough steak tissue. Get a decent cut of steak, salt it lightly and let it sit for several minutes to an hour. Cook it in a grill pan (if you like the sear marks of a grate, as I do). While still in the pan, top with some butter. Let it melt and mix with the drippings; add some water, let the drippings/butter/water mingle a few seconds, cook for a few more seconds, and decant with is now the pan sauce. Plate it up, drizzle with a spoonful of pan sauce, and save the rest for dipping. Enjoy!

I like A1 best. However, if you’re looking for something you have to prepare yourself, try a Stilton. I’ve only ever eaten a steak without steak sauce a few times in my life. One was a perfectly prepared medium rare. Even the restaurant where i got it hasn’t matched that miracle meal since. The other times it was a Stilton steak.

I just salt a steak prior to cooking it but you have to allow enough time for the juices to come to the surface of the steak and then be sucked back into the meat. This can take as much as an hour per side. It tenderizes, seasons and keeps the mest juicy.
