What to cook with bratwursts and eggs?

Mashed potatos or roasted potatos fit well in my opinion. I assume fried or maybe scrambled egg right?
Some kind lf cabbage would also fit, kale for excample. It sounds like a stereotypical german dish though🙈 nothing wrong with it but my mind makes this fit best.

Fry the bratwurst until the skin ''bursts''; then add a little beer and simmer for a few minutes. The eggs: make omelette to wrap the bratwurst. Then you add sliced cheese on top, season with some rosemary and thyme and give it into the oven until the cheese melts.
Serve it with toast and garlic butter.
