But what fat do you put in the pan? Personally, I think anything other than butter is an abomination, and they should be fried gently on a low heat.


I usually fry them in (Kerry Gold) butter on a fairly low temp. If I make bacon, I fry them in the bacon grease.
But I rarely eat eggs sunny side up. I don't care for runny yokes.
Once I break them in the skillet, I add salt and pepper, then break the yokes and stir them around to evenly distribute the yokes and whites without scrambling them. Once one side is done enough but the top is still runny, I flip them over for just a few seconds. I don't like them overcooked.
The only time I order eggs sunny side up is when I have corned beef hash. I mash the eggs, hash and crispy hash browns together. 😋
I do my cooking on a concrete slab outside my house in the front yard on the driveway because it’s so hot here. All I do is just put a little bit of cooking oil right on the driveway and throw my eggs down on it. I don’t need any frying pans. I don’t need to cook inside the house turn the stove on or anything. 😊
Butter. With low heat butter doesn't burn, high carbon steel pan ensures equal heat transfer. I've noticed, Teflon coated aluminum pans have some problems with heat distribution on low flame while frying slowly eggs or pancakes.
Carbon steel for the win! I am in the process of buying a set of carbon steel pans so I never have to buy pans again.
I fry mine in coconut oil or avocado because my partner refuses to have any other oils in the house. Says ‘they aren’t healthy’ 🥲

I use butter on mid-low fire.
Then add any other things i want.
Sausage, salami, peperoni, pepper, red pepper, onions, tomatoes... Whatever. And cook em nicely for a good 10 to 15 mins.
And finally I whip the heck out of the eggs until the whole thing is golden yellow/orange and no single sign of transparent white.
Butter, with a drop of oil to stop it burning. Once it's started, chuck in a spoonful of water and put a lid on to steam the top.
It varies according my mood. Generally I tend to use a little olive oil, and sometimes margarine. Now, I never fry as badly as most examples shown in your picture ! The white should never be burned.
I'm dairy free so coconut oil, it's got a higher burning point than olive oil so I prefer it.
I use the olive oil spray made by PAM just enough so it won't stick.
I like my eggs dunny side up with the white cooked and the yolk runny I usually cook them in butter in my well seasoned cast iron skillet which is stick free. I do occasionally cook them in bacon fat if I cooked bacon in the pan first the edges of thecwhites get mice and crispy in yhecbscon fat andvthr yols are perfectly runny, theybalsonget a bit of a bacon flavor added to them.
I prefer scrambled eggs so I don't fry them sunny side up like this often. When I do, I use a non-stick pan with maybe just a small amount of butter, for flavour as well as so the egg won't stick.

Those pics are deceiving. The over fried ones are because of temperature not type of oil. And I do agree with butter they’re delicious but I prefer olive oil for health reasons.
I rately fry eggs, I prefer them boiled but if I eat them fried, then I use extra virgin olive oil

Usually bacon grease. Cook up the bacon and set it aside. Then lower the heat and fry my eggs. I don’t agree that sunny is the only right way though. I like my eggs sunny, over easy and omelette. Scrambled is just lazy. Ell oh ell!
Nothing else goes in the pan. It’s not required. A good conductive pan , a tiny amount of water medium heat & cover. The steam does all the work.
The best eggs fried are with bacon grease. If no bacon grease is available use butter.

I've found beef dripping gives the best results, with enough to to have the white submerged, and if you need the yolk fully set for a sandwich it is easier to flip the egg to solidly cook the yolk.
