wow. I am not a nutritional expert but you have energy, lost weight, thriving(your term). Doubt your diet ratio is a problem. Crap, now I have to feel guilty and go clean out my fridge. Thanks a lot for the guilt trip. I am going for some celery now.
You really need multivitamins. Veggies are good for you but they can't give you everything that meat can. Its perfectly fine to eat 70% veggies as long as you add in the multivitamins.

I would say you need to get a little bit better balance including fruit and protein.
My diet was unbalanced and I went to see a nutritionist who got me on a good 1500 calorie regimen. It includes protein, veggies, fruit and some carbs.You're OK. Read "Fit for Life" by Harvey Diamond. It's kind of similar to what you've been doing as of late. You'll really relate.
