What can I add to scrambled eggs to make them taste better?

Roasted bacon or smoked ham, green onions, Parmesan cheese, chives... those are generally adds you can experiment with. Another trick is to lower heat and preventing proteins of full coagulation. Practically you take the pan with eggs inside from fire before they are 100% done and remaining heat in pan metal cooks them to the point they still remain 5% fluid. If you use butter, use a little bit more and try to roast this butter a bit. Butter contains milk proteins which turn golden brown after 3-4 minutes on medium fire. This gives scrambled eggs specific aroma but too much roasting and it tastes burnt. Adding salt while scrambling in a bowl and waiting 5-10 minutes is a trick that makes scrambled eggs more homogenous. Whipping while roasting mixes eggs with fat on the pan and makes a kind of emulsion. This make a different taste too.

There is many option to experiment with and scrambled egg preferences differ individually. Using even a different pan makes slight difference. So I wouldn't say there is a golden rule for perfect eggs.

The only different idea I have to offer is making them with cottage cheese. They become the fluffiest eggs I've ever had.

Crack 2 eggs into a bowl and whisk them together until the yolks and whites are fully combined.

Add 1/3 cup small curd cottage cheese, salt, black pepper, and garlic powder, then stir gently until everything is evenly mixed.

Scramble as you would in butter. I like to sprinkle fresh chives over them when finished.

I don't really like cottage cheese, but you can't even tell it's in there and the eggs are delicious!

Anyway, I personally love scrambled eggs. I put the eggs in blender or bullet and add a small amount of cream or half n half, and give it a quick blend before pouring it in the pan. Meanwhile, I've seen sautéing whatever ingredients I feel like having; tomatoes, onions, peppers, ham, garlic, mushrooms, or whatever you want in any combination. I don't generally use more than 3 ingredients. While it's cooking, I blend in freshly grated cheese, usually a sharp cheddar, pecorino or reggio parmigiana, or maybe a Mexican cheese blend.

But at the base of it all, it's still eggs, and it's going to taste like eggs with other ingredients! Enjoy.

I fry up some bacon that doesn't have hardly any fat, and make it crumbly.

I add a small can of Ortega brand green chilies into the egg mixture, then throw in the bacon pieces. Add a few dashes of salt into the mixture.

Warm up a buttered frying pan (not hot cause you'll turn the butter brown and we don't want that); add the egg mixture into the pan and cook until the texture of your choice.

The chilies are mild but add a great flavor to the scrambled eggs.
