yes. honestly it depends on several things. if you add extra sugar they may break down more. if you cook them too long they may break down. if you cut them thin they may break down. so it will depend on several factors some outside of your control. by and large it will also depend on your choice of dessert. apple pie you want a mix. you want chunks that are soft (no hard crunch) and some that break down into a thick jam like texture (that is what gives that beautiful filling look in grandma's pie. for things like applesauce. total mush. the more mush it is the better.
I've had apple pies where the apples were broken down and it was just kind of a thick sauce, and I've never liked that. Definitely Granny Smith for pies. Fujis for eating.
Keep their shape. I use "White Transparent" apple sort for apple pie, these apples remain in bigger pieces after caramelizing
Not a big apple anything fan but I'd prefer it to keep it's shape.
