Because salmon is fatty it benefits more from something like lemon or soy sauce than a creamy one such as tartar.

Given that salmon has kind of a light flavor I would think tartar sauce would overpower it flavor wise. I've never tried it so I don't know I usually do mine with lemon, pepper and butter.

There is a restaurant in the South that serves it cold poached with crackers and homemade tartar sauce, one of the best things I've ever had.
